Asparagus and Orzo Salad:

Ingredients:

Dressing: 2 lemons, juiced and zested 3 cloves of garlic, crushed 1/2 c. olive oil 1/2 tsp. salt

1/2 tsp. ground pepper

Salad:

1 bunch of asparagus (about a pound), cut into 1/2-inch pieces 4 c. water 2 c. chicken broth 2 c. orzo pasta 1/2 c. green onion, sliced 1 lemon, sliced 1/2 c. feta cheese, crumbled

Instructions: To make the dressing, whisk together all of the ingredients. Set aside. 1. Combine the water and chicken stock in a large stockpot and bring to a boil. Add the orzo and boil for 10 minutes. 2. Then add the asparagus to the pot and continue cooking the asparagus and orzo for another 5 minutes. Drain. 3. Dump warm orzo and asparagus in a large bowl. Add green onions and lemon dressing. Garnish with lemon slices and feta cheese. 4. Serve immediately.
