Beef and Broccoli Stir Fry
Cook this dish in a wok if you have one, but a large skillet will also work well. Serve this over prepared white rice or jasmine rice for a better-than-take-out meal.
Ingredients:
3 Tbsp. cornstarch, divided
1⁄2 c. water, plus
2 Tbsp. tap water, divided
1⁄2 tsp. garlic powder
1 lb. filet mignon cut into thin strips
2 Tbsp. extra virgin olive oil, divided
4 c. fresh broccoli florets
1 small yellow onion, cut into wedges
1⁄3 c. soy sauce
2 Tbsp. light brown sugar
1 tsp. fresh grated ginger
Directions:
1. In a small bowl, whisk together 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth. Add beef strips and toss to coat.
2. In a large skillet or wok over medium high heat, cook beef in 1 tablespoon olive oil until beef reaches desired doneness; remove and keep warm.
3. Cook broccoli florets and onion in remaining oil for 5 minutes and return beef to the skillet.
4. Combine soy sauce, brown sugar, ginger and remaining cornstarch and water stirring until smooth. Pour into pan and cook and stir 2 minutes.
