Hamburger Chowder

Hamburger Chowder

You can shorten the cook time by using canned vegetables but the barley will need about 45 minutes until tender.

Ingredients:

1 lb. ground beef

1 small yellow onion, diced

2 c. diced peeled potatoes

1 c. chopped carrots

1 c. chopped celery

1 (28-oz.) can diced tomatoes with liquid

2 c. tap water

2 c. tomato juice

1/2 c. pearl barley

1 Tbsp. dried parsley

1/2 tsp. dried oregano

2 tsp. salt

1/2 tsp. ground black pepper

Directions:

1. In a 2-qt. sauce pan over medium high heat, cook ground beef with onion until meat is browned and onion is tender; drain if necessary.

2. Add remaining ingredients and bring to a boil, reduce heat, cover and simmer for 1-1/2 hours, stirring occasionally.
