Quick Tortellini Soup


1 (9-oz.) pkg. frozen cheese tortellini

2 (10.75-oz.) cans condensed tomato soup

2 c. chicken broth

2 c. milk

2 c. half-and-half cream

1/2 c. sun-dried tomatoes, drained and chopped

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. dried basil

1/2 tsp. salt

1/2 tsp. ground black pepper

1/2 c. shredded Parmesan cheese


1. Prepare tortellini according to package directions.

2. Meanwhile, in a large stock pot, combine soup, broth, milk, cream, tomatoes and seasonings. Cook on medium-low until heated through; stirring frequently. Drain tortellini and stir into the soup. Stir in cheese and continue to cook for 5 minutes longer.
