Ultimate Cheeseburger Soup
This recipe works well with two or three cans of sliced potatoes and 4 hours of cooking time.
2 lbs. ground beef, crumbled and cooked
1/2 yellow onion, diced
1 (14.5-oz.) can diced tomatoes
1 lb. bacon, cooked and broken into pieces
6 medium potatoes
1 c. carrots, sliced
1 (8-oz.) pkg. cream cheese, cubed
6 c. chicken broth
2 tsp. salt
1 tsp. ground black pepper
2 c. milk
1/2 c. all-purpose flour
3 c. cheddar cheese, shredded
1. Place cooked ground beef, diced tomatoes, 1/2 of the cooked bacon, onion, potatoes, carrots, cream cheese, chicken broth, salt and pepper into the crock of a slow cooker.
2. Cover and cook on low for 7 hours. One hour before done cooking, whisk milk and flour together and pour into the slow cooker. Stir in 3 cups of cheese. Let cook another hour or so.
3. Garnish with remaining bacon pieces and serve.
