Side Dish: Honey Glazed Carrots

Whose kids like to eat vegetables? This is a recipe that adds just enough sweetness that this is a nice dish to serve every now and then.

Honey Glazed Carrots Ingredients: 1 lb. raw carrots 1 T. melted butter 3 Tbsp. brown sugar 1 Tbsp honey 1/2 tsp. salt Directions: Peel carrots and cut strips 1/2x1/2x1/2 inches. Cook in boiling, salted water until barely tender. Drain well. Combine butter, brown sugar, honey and salt in a small saucepan. Add drained carrots and simmer 4 to 6 minutes or until glazed, stirring occasionally.

I have also used canned carrots and tossed them directly into the glaze until they are heated through. The fresh carrots provide a nice flavor, but when in a hurry the canned carrots perform beautifully!
