Slow Cooker Chicken

   One of the things I love about Kansas is the weather. Just when you think spring has sprung you wake up to a chilly morning. Dress in layers I tell the kids. We’ve enjoyed these quick-to-the-table slow cooker meals this week so we can spend time outside with the warmer early-evening temperatures.

   The kids enjoy going on scavenger hunts while we are on our evening walks. Each one takes a small sack to fill with the wonders of nature they find along the way. Upon return to our front yard, they dump their treasures out and we talk about the color and texture of each find. We talk about what part of nature each item is and the role it might play. Some items we just don’t talk about and I pretend they didn’t pick them up.

 

Chicken Broccoli Alfredo

This recipe was a home run with the kids at Sutton Central. You can add the broccoli at the beginning as the directions suggest or add them with an hour to go. I prefer to use the microwave steamfresh-type broccoli and add it just before serving.  Stop by the website for a from-scratch version of Alfredo sauce.

Ingredients:

3 boneless, skinless chicken breasts, cut into 1-inch cubes

1 (16-oz.) bag frozen broccoli florets

1 medium-sized green pepper, chopped

2 (16-oz.) jars Alfredo sauce

Directions:

1. Place all ingredients in slow cooker in order.

2. Cook on LOW for 4 to 6 hours.

3. Serve over cooked noodles.

 

Teriyaki Chicken

This recipe is a quick solution to dinner. We like it over white rice or vegetable fried rice from the freezer section to make a quick-to-the-table meal.

Ingredients:

3 boneless, skinless chicken breasts, cut into 1-inch cubes

1 c. teriyaki sauce

1 c. tap water

2/3 c. light brown sugar

2 cloves, minced

1/8 tsp. ground ginger

Directions:

1. Place all ingredients in slow cooker in order.

2. Cook on LOW for 4 to 6 hours.

3. Serve over cooked white rice.

 

Creamy Italian Chicken

We like to complete this dish by serving it with cooked wide egg noodles. Stop by the website for a from-scratch version of cream of chicken soup.

Ingredients:

4 boneless, skinless chicken breasts

1 (8-oz.) pkg. cream cheese, softened

1 (10.75-oz.) can cream of chicken

1 (14.75-oz.) can cream corn

1 (1-oz.) pkg. dry Italian Salad Dressing and Recipe Mix

Directions:

1. Place all ingredients in slow cooker in order.

2. Cook on LOW for 4 to 6 hours.
