Happy Spring!


Layered Mexican Casserole

My kids’ latest favorite meal. Crush the Doritos coarsely as you don’t want to end up with crumbs.  Give the foil a quick spray of non-stick cooking spray before covering the casserole for easy release.


1 medium yellow onion, diced

1 lb. lean ground beef

1 c. prepared salsa

1 pkg. taco seasoning mix

1 c. sour cream

1 can cream of chicken soup

1 large bag nacho cheese chips

2 c. shredded taco blend cheese

Topping: diced tomatoes, shredded lettuce, avocado and sour cream.


1. Preheat oven to 350 degrees F. Lightly spray a 9-by-13-inch baking dish with non-stick cooking spray.

2. Brown ground beef with onion until no pink remains. Stir in salsa, taco seasoning and 1/3 cup water.

3. Transfer meat mixture to a large bowl and stir in sour cream, soup and 1 cup of shredded cheese.

4. Open the bag of chips and coarsely crush them.

5. Layer 1 1/2 cups of chips on the bottom of the baking dish. Top with half of the meat mixture and spread evenly. Repeat these two layers. Top the beef layer with remaining chips and sprinkle remaining cheese evenly across the top. Cover with foil and bake 30 minutes. Remove foil and bake an additional 20 minutes.

Sausage and Pepperoni Pizza Deep Dish

To this basic recipe I like to add a half cup of diced red or green peppers, sliced black olives, crushed red pepper and browned ground beef.


3 1/2 c. Bisquick

1/3 c. grated Parmesan cheese

1/4 tsp. garlic powder

1 1/4 c. milk

1 (16-oz.) jar or can of pizza sauce

1 c. mini pepperoni slices

1/2 lb. sausage, cooked and crumbled

2 c. shredded pizza blend cheese

1/4 tsp. dried oregano


1. Preheat oven to 375 degrees F. Lightly spray a 9-by-13-inch baking dish with non-stick cooking spray.

2. In a large bowl, stir together Bisquick, parmesan cheese, garlic powder and milk. Drop by heaping tablespoons in bottom of baking dish. Bottom will not be completely covered. Pour half of the pizza sauce over the mounds. Sprinkle half of the pepperoni, sausage and cheese evenly across the top.

3. Drop remaining dough in the same fashion across the top. Pour remaining pizza sauce over the top and sprinkle remaining pepperoni, sausage and cheese over it. Scatter oregano across the top.

4. Bake uncovered for 30 minutes. Cheese will be bubbly and dough lightly browned.


Chili Dog Oven Dish

Segen assisted with this recipe and aptly named it for exactly what it is and wrote the directions steps. She constructed the dish and was elated that her siblings devoured it. Because we loved the chili and hot dog part the most, we will double that part next time.


1 (28-oz.) can prepared chili with beans

8 all-beef hot dogs, cut into bite-sized slices

2 c. shredded Cheddar cheese

2 cans refrigerated golden layers biscuits

2 Tbsp. butter, melted

1 tsp. garlic powder


1. Preheat oven to 375 degrees F. Lightly spray a 9-by-13-inch baking dish with non-stick cooking spray.

2. Open the can of chili and pour it into a large bowl. Add the bite-sized slices of hot dog to the bowl and stir until combined. Pour into bottom of baking dish.

3. Carefully open biscuit tubes. Cut each biscuit into four pieces and toss into a large bowl. In a small bowl mix the melted butter with the garlic powder and pour it over the cut biscuits in the bowl. Quickly toss the biscuits with the butter until they are all coated.

4. Place the biscuit pieces in a single layer across the top of the meat mixture. You may not need all of the biscuits.

5. Bake uncovered for 20 minutes or until the biscuits are lightly golden and cooked through. Remove from oven and let cool for about five minutes before serving.

Apron Strings Tips: Resist the urge to toss too many biscuits on the top. Double layering the biscuits will likely result in doughy unbaked pieces between the layers.


Sausage and Potato Bake

I came across the Italian-style herb sausage link at the store and couldn’t resist trying a recipe with it. This dish could be served for breakfast or brunch as well. Pair it with fresh fruit and green beans to make it a meal.


1 c. Miracle Whip

1 c. sour cream

1 medium yellow onion, diced

1 (30-oz.) pkg. shredded hash brown potatoes

1 pkg. Italian-style herb sausage, cut into 1/4-inch-thick slices


1. Preheat oven to 400 degrees F. Lightly spray a 9-by-13-inch baking dish with non-stick cooking spray.

2. In a very large bowl, mix Miracle Whip, sour cream and onions. Add potatoes and fold until all potatoes are coated. Stir in sausage slices.

3. Pour into baking dish and spread until even.

4. Bake uncovered for 60 minutes or until heated through.

Apron Strings Tips: I like to add 1/2 tsp. ground black pepper in step 2.
